Belize is bracing itself for the opening of lobster season later this month. The celebrations run countrywide over several weeks, with Lobsterfest events in San Pedro, Caye Caulker then Placencia over consecutive weekends.

We will be monitoring the festivities and keeping a tally of our favourite culinary lobster creations, which have ranged from a delectable lobster ravioli with a saffron seafood cream, to the avant garde lobster ice cream from Rojo Beach Bar.
